After 30 years in the hospitality game, restaurateur Mike Cordero is heading back into the trenches—or, in this case, the kitchen—at his latest venue, Prime Time Sports Grill.
The Fairfax sports haven will draw freely from Cordero’s other properties, the now-defunct Bravo’s and Caribbean Breeze, retaining Bravo’s brick oven for gourmet pizzas and repurposing top sellers from the CB menu (seafood spring rolls, homemade empanadas, assorted ceviches). Cordero expects to showcase some serious beef, including a Kobe-style burger ($9) and 32-ounce Angus porterhouses and prime ribs. “We’re looking for the bigger cuts and the hearty eaters,” he says.
Live entertainment will be a weekend cornerstone, with chocolate fountains and bottomless mimosas rolled out for brunch.
