What Chipotle is to the burrito, Black Lime wants to be to Mediterranean food.

ON MENU Assembly line ordering: Start with a base (lavash wrap, salad or kumpir, a Turkish-inspired oversized baked potato that’s whipped with hummus); pick a protein (falafel, grilled shrimp); pick a topping (spicy tomato relish, couscous) and a sauce (harrissa/feta spread, black lime aioli).
ON TAP Rosewater-spiked lemonade.
NEVER ON “We’re never going to have burritos or burgers,” says Paul Stratmeyer, a partner in the operation.
FUTURE PLANS The team filed for a franchise license and envisions multiple area locations. “This is definitely the next iteration of quick casual. Burritos are just burritos,” says Stratmeyer. –SG
