Thanksgiving Recipe: Pumpkin Rolls

Pumpkin Rolls

I am not a fan of pumpkin pie! There, I said it! This is why I make a pumpkin roll instead. It’s delicious and makes a beautiful presentation. It looks complicated but it’s simple to make. It’s usually the talk of the dinner!  So if you are not big on pumpkin pie, try this alternative. You won’t miss that pie!

Recipe

Ingredients:

For the cake
3 eggs
½ teaspoon cinnamon
1 cup sugar
1 teaspoon baking soda
2/3 cup canned pumpkin
¾ cup flour 

For the filling
8 ounces cream cheese, softened
1 cup powdered sugar
2 ablespoons butter
1 teaspoon vanilla
Powdered sugar for garnish

Instructions:

For the cake
Mix all of the ingredients into a well greased cookie sheet. 
Bake at 350 degrees for 15 minutes.  
Cool 3-5 minutes.  (This can go into the refrigerator.) 
Turn sheet onto wax paper and roll it up with the wax paper inside. 
Cool for 45 minutes. 

For the filling
Beat all ingredients with an electric mixer until smooth. 
Unroll cooled pumpkin roll and spread it evenly to the edges of the roll. 
Roll back up with new wax paper on the outside only and refrigerate until ready to use.  
Sift a little powdered sugar on top before serving.
