After winter, when we’re tired of slurping soup and frying Brussels sprouts, spring is a welcome change. It’s time for warmer weather, a strong ankle strap sandal and to go crazy over the year’s first sign of fertile ground.
I’m not sure why the food-obsessed becomes particularly enthralled with certain spring ingredients—maybe its fleeting availability, its stark contrast to rutabaga—but the enthusiasm for fiddlehead ferns, morels and ramps seems unparalleled.
Curious Grape took notes and combined all of spring’s superstars on one green plate: gnocchi grounds the dish with crunchy baby fiddleheads, pocked and meaty morels and garlicky wild ramp pesto.
