Taste: This isn’t an ordinary taco. In fact, it’s more akin to a sope. Instead of tightly wrapping the fillings in a flour tortilla, this taco is open-faced so there will be no grabbing it with your hands. Knife and fork are 100 percent necessary. My younger brother, who shared the two messy piles of fried dough and shredded meat with me, called them “magical.” Juicy, tender pulled pork meets tangy chili garlic coleslaw and the result is the contrasting combination of warm barbecue sauce and cool, crunchy cabbage. It all sits on top of fried native Alaskan bread, crispy on the outside yet soft and barbecue-soaked in the middle. The mayo has a smoky taste and pairs nicely with the fresh tomatoes of the pico de gallo. The next time you think taco, go Urban Native American.
