Being Vietnamese, I have grown up eating pho all my life, from restaurants to my grandmother's. Everyone has a different take on pho. Although the ingredients are usually the same, it's the love, attention, and details that truly make a unique bowl of pho. I have never had such cravings for pho as I have had after experiencing Pho Bistro. It's their broth. Clean and bursting with flavor. It tempts me every time not to mess with my bowl by adding my own additions of hoisin or Siracha sauces. And the bowls are completely filled with mounds of meat and noodles! Every time we go, we debate on splitting a bowl, but are too greedy to share, and end up aching to finish our massive bowls. No choosing here, whether your favorite part of pho is the noodles, the meat, or the broth, Pho Bistro delivers in every category. It is a mixed blessing that we don't live next door to it or I seriously would eat it every day. |
I have experienced numerous PHO establishments all over NOVA from Fairfax to Arlington/Falls Church, Herndon to Centreville and this is by far the absolute best. The first thing you notice is the cleanliness of the place, from the floors to the tables, spoons to chopsticks. No other PHO place that I have gone to has gotten this basic aspect correct. The staff is also exceptional, they greet you upon entry and follow up throughout the meal with beverage replinishment. The noodle bowls are delicious and HUGE! The bowls have more and better quality meat than previous establishments I have visited. Get there early on the weekends or you will wait in the line that is out the door.
