The barrels that beer once aged in are deconstructed and turned into chairs and light fixtures.
The spent grain from beer-making that was once fed to livestock, well, those same animals will be on the menu.
“It’s the entire life cycle of beer and food in one location,” says Dom Digiovanni.
Digiovanni, the COO and an engineer by trade, is describing the forthcoming Heritage Brewing Company Common Market, a multidimensional space. There’s also another aspect: coffee.
Market Common will be a roastery, a coffee shop, a restaurant and a brewery. The team behind Heritage, including Digiovanni, started roasting beans in their Manassas brewery and experimenting with coffee by canning nitro brew. They started a company for it: Veritas. Right on trend, Common Market will offer nitro on three taps and create infusions. Last year at the brewery they concocted a Christmas eggnog latte infused with french vanilla and peppermint mocha. Yes, say hello to draft lattes.
Market Common will serve American fare like rotisserie chicken, burgers (turkey and beef) and gnocchi, though the menu is still under development as chef interviews were occurring last week. The food will be run by New Yorkers Jason O’Brien and Donald Crosby (of Hudson Hound, for one) with beer and coffee by Heritage and together they will be starting a restaurant group.
